Okay I'm obsessed with No bake cookies. It's my SERIOUS downfall. Rarely do I make them anymore because I'll eat them all, (and I'm vegan and have a peanut allergy so honestly they should be COMPLETELY off limits), but here and there I'll buy one at a coffee shop. I'm one of those people who gets very specific crazy cravings for these things and finally decided to invent a recipe that was close enough to the real taste and texture but is actually healthy.
Here's what I came up with. I'll have to make them again to get the exact measurements because I really just through things together, but I've made some guestimates if you want to give it a go. The real proof that these are good is that my parents ate them. Willingly. They usually won't even touch anything I make hahahha. Anyway, these happen to be vegan and gluten-free. I get super full after only one cookie and it holds me over forever. With the original no bake, the sugar was like crack and I couldn't stop eating them. I hope you get a chance to make them an enjoy them! Such a yummy alternative :)
Approximate Ingredients:
2 bananas
1 1/2 Tbls sugar
1 Tbls coconut oil
1 1/2 tsp cocoa powder
1/2 tsp vanilla extract
dash of salt
1/4 cup shredded unsweetened coconut
1 1/2 cups oats
In a saucepan mash bananas up and add coconut oil, sugar, and cocoa. Mix together on medium heat and let it lightly boil until it thickens (about 2 minutes). Remove from heat and add vanilla, salt, coconut, and oats. Make sure you add these things while it's still hot so that they are sofened a bit. Then scoop onto a plate in 2" diameter balls and put in the refrigerator. After about 30 minutes they're ready! The texture is shockingly exactly like the real thing and they are super good. I might use more cocoa next time but I'm happy with the way they turned out. Cheers!
